  • 2 cups filtered water
  • 3 tbsp maple syrup (or agave syrup)
  • 1 tbsp fresh lemon juice
  • 1 tsp vanilla extract (optional)
  • 1 tsp probiotic powder (from vegan probiotic capsules)
  • ΒΌ tsp salt
  • Β½ cup fresh orange juice (for extra flavor, optional)

Instructions

  • Blend the Base: In a blender, combine coconut yogurt, filtered water, maple syrup, lemon juice, vanilla extract, and salt. Blend until smooth.
  • Add the Probiotics: Open the probiotic capsules and add the powder to the mixture. Blend again briefly (just enough to combine).
  • Ferment the Drink: Transfer the mixture to a clean glass jar with a loose lid or cheesecloth covering. Leave it at room temperature (68-75Β°F) for 12-24 hours to ferment. The longer it sits, the tangier it will be.
  • Taste and Adjust: After fermentation, stir the mixture and taste. If you prefer it sweeter, add more maple syrup. If it’s too thick, mix in a bit of water.
  • Strain and Chill: Strain the drink through a fine-mesh sieve if you want a smoother consistency. Transfer to a bottle or airtight container and refrigerate for at least 2 hours before serving.
  • Serve Cold: Pour into small glasses and enjoy! Shake before drinking, as natural separation may occur.
