Description

Crispy buffalo cauliflower tacos with only 8g net carbs per serving. Perfect for diabetic meal planning with bold buffalo flavor, fresh vegetables, and creamy ranch dressing in low-carb tortillas.


Ingredients

– 1 large head cauliflower (2 lbs), cut into florets

– 2 tablespoons avocado oil

– 1/2 cup sugar-free buffalo sauce

– 1 tablespoon apple cider vinegar

– 1 teaspoon garlic powder

– 1/2 teaspoon smoked paprika

– 1/4 teaspoon cayenne pepper

– Salt and black pepper to taste

– 8 small low-carb tortillas

– 1 cup shredded purple cabbage

– 1/2 cup diced celery

– 1/4 cup red onion, sliced

– 1/2 cup cherry tomatoes, halved

– 1/4 cup fresh cilantro

– 1/2 cup Greek yogurt

– 2 tablespoons mayonnaise

– 1 tablespoon lemon juice

– 1 teaspoon dried dill

– 1/2 teaspoon garlic powder

– 1/4 teaspoon onion powder


Instructions

1. Preheat oven to 425°F. Line baking sheet with parchment. 2. Toss cauliflower with oil, garlic powder, paprika, salt, and pepper. 3. Roast cauliflower 20 minutes until edges golden. 4. Mix buffalo sauce with vinegar and cayenne. 5. Toss roasted cauliflower with buffalo sauce mixture. 6. Return to oven 8-10 minutes until crispy and caramelized. 7. Mix ranch ingredients in small bowl. 8. Warm tortillas in dry skillet. 9. Fill tortillas with buffalo cauliflower and fresh toppings. 10. Drizzle with ranch and garnish with cilantro.

Notes

Store components separately for up to 4 days. Reheat cauliflower in 375°F oven for 5-7 minutes to restore crispiness. Net carbs calculated by subtracting fiber from total carbs.
