Ingredients

  • Mixed greens (3 cups)
  • Cherry tomatoes, halved (1 cup)
  • Cucumber, sliced (1 cup)
  • Watermelon cubes (1½ cups)
  • Peaches, sliced (2 medium)
  • Feta cheese, crumbled (½ cup, optional)
  • Toasted walnuts (¼ cup, optional)
  • Olive oil (¼ cup)
  • Lemon juice (2 tbsp)
  • Honey or maple syrup (1 tbsp)
  • Dijon mustard (1 tsp)
  • Salt & pepper (to taste)

Instructions

 

  1. Wash and dry greens.

  2. Slice fruits and vegetables.

  3. Whisk dressing ingredients.

  4. Toss salad gently.

  5. Drizzle dressing, garnish with cheese/nuts.
